Hey! All my tofu friends! Do you like the taste of tofu or do you like tofu when it doesnβt taste like tofu? And whatβs your favorite way of cooking it?

@Caiotekit@convo.casa this is a good air fryer recipe I use https://jessicainthekitchen.com/wprm_print/25630
@Caiotekit@convo.casa I like to cube it, freeze it, then thaw and press it to get the water out, marinate it in oil and tamari and spices, and bake in a bbq sauce or make almond tofu. The freezing gives it a chicken-like texture, pressing the water out lets it absorb the marinade. And I like it in miso soup π²![]()
@Caiotekit@convo.casa tofu has a taste?
Ok, Iβm kidding, but it is subtle. Tofu is a protein palate on which chefs can paint different flavors.

Tandoori Tofu, PCC

@Caiotekit@convo.casa I like all forms of tofu. My favorite brand of tofu is Hodo, it's significantly better than the average block of tofu found in an American grocery store.
The typical way I eat tofu is to rinse it, slice it in half, squeeze out excess liquid, cube it, and then fry it in a pan with oil. I cook it so that at least two sides of every cube has a crispy crust.
I will often (but not always) finish cooking the tofu by turning off the heat, and add 1 to 2 tbsp of nutritional yeast + a pinch of salt to the pan, then stir to coat, and let the residual heat of the pan cook the nutritional yeast.
@Caiotekit@convo.casa Pretty much all packaged tofu needs some effort to get rid of the xing, the grassy flavor. Pouring boiling, slightly salty water over it and leaving it for 10 minutes helps, for a really minimal preparation. But I like all tofu methods! boiled, fried, stuffed, smoked, baked, breaded, eggy, pudding, seared, sauced, spiced, crumbled...
@Caiotekit@convo.casa @MelissaBearTrix@gives.hugz.online My favourite tΕfu dishes in order:
γγγγ©γ (gammodoki) fried tΕfu fritter with veggies.
η°ζ₯½θ±θ
(gendakudΕfu) skewered pieces of tΕfu baked & coated with ε³ε (miso).
ηΌγθ±θ
(yakidΕfu) grilled tΕfu.
ιΊ»ε©θ±θ
(mΔbΕdΕfu) spicy tΕfu & minced meat.
@sunumbral@beige.party Thanks π
. I did freeze mine. I sliced it thin and coated it with some cornstarch, garlic salt and Tabitha Brownβs Smoky and Sweet seasoning. Then I pan fried it. It still had a bit of tofu flavor, but when I mixed with the potato, onion, and cabbage dish I made, it suddenly turned delicious. Iβll have to try it your way, it sounds delicious.
@geos@toot.community Thanks π![]()
@carrideen@c18.masto.host Thanks π
for that idea. I usually like grassy flavors, like matcha, but thereβs something about the tofuβ¦I will try that idea.
@Caiotekit@convo.casa The bbq version was a big hit at Country Fair in the 80's, although Toby almost vetoed another tofu vendor π![]()

@Caiotekit@convo.casa This is the book I was using
@sunumbral@beige.party Thanks! β€
οΈ I just looked at Better World Books and they have a copy for $5.88. I think I will order it. It got good reviews on Amazon.
@Caiotekit@convo.casa it's got some good ideas... if this is the book with the chocolate tofu frosting... it sounds kind of gross but it's amazingly good, people special ordered whole cakes with it all the time.
@sunumbral@beige.party Thereβs actually an updated version that I just ordered. Less oil and sodium, same recipes. So I hope itβs just as good.
