Everything I look up about it tells me to click on the ... on my profile on the web app and choose Followed Hashtags, but there's no Followed Hashtags option showing on that menu. Is there another way to find them?

mkj@beecycling@romancelandia.club Your server is running a quite old version of Mastodon. (It's on the 4.1 branch, whereas current stable is 4.4 and the initial stable release of 4.5 is coming probably in the next few days.) That may have something to do with the differences you're seeing.

Yeah, your server is a bit too far behind on its software now. Servers do vary in which version they are running, but I think they've just slipped out of the supported range.
