There's a certain (rather bland) "American" taste palate a lot of these places cater to though.

You walk into a Panera, and it is always exactly the same, no matter where in the US you are.

Secondly, just a bit outside of bland Midwestern standards to feel a bit "different". Not too far though.

Thirdly: Marketing.
