I have had to upgrade my computer as the previous one did not accept Windows 11, I used to be able to use Elk but now have no idea how to get back to it. Should I just carry on on this app instead?

You can use Elk via https://elk.zone but as Mark says you can also just use your server's website if you prefer (for you that's https://mastodonapp.uk).
You can also use third party apps too, they tend to be better than the official app.
