Starting with four pounds of diced daikon
To that, you add two tablespoons of sugar and two tablespoons of salt. You stir it around and then let it sit for a half hour. The salt and sugar will draw water out of the diced radish. That liquid will gather in the bottom of the bowl. After a half hour, you pour the liquid out, but save one third of a cup of it
To that liquid, you add one quarter cup of fish sauce, Korean chili powder, garlic, ginger, and diced green onions
Then you mix everything together and put it in a big jar. As it sits, more liquid will be generated and the radish will begin to pickle
This is a fermentation pickle though so the longer it sits, the stronger the flavor gets
