Gluten-free bakers:

I have an infusion appointment for Christmas Eve Eve (Dec 23rd) and I want to bake special treats for the staff. I have several 1 to 1 flour blends ready, and at least one recipe that uses oat bran instead of flour.

My question is this: do you have any gluten-free Holiday treat recipes (with no tree nuts, peanuts, pineapple, soy [like silken tofu] avocado [oil] or banana) that you love, that come out great, despite being gluten-free? I apologize for the narrow allergy parameters.

I know roll out sugar cookies and mini pie dough come out fine, with enough butter. I usually use unsalted butter, but I wonder if I need extra leavening, and which type would be the most flavor-neutral. I'd like to experiment with natural sweeteners, too, like maybe honey or real maple syrup. I usually make my own fruit fillings for the mini pies, too.
I have plans for mini cheesecakes and choc bark.
I'm even willing to try my hand at candy-making, and I already know how to make ganache, crème Anglaise, and meringue topping, but I've not made cream fillings.

I hate that anyone named Melissa will now be associated with this potentially deadly hurricane. I have a friend named Katrina who changed her name to Kat after the 2005 hurricane killed nearly 1400 people.

Maybe we could just name hurricanes/cyclones after the oil companies and the billionaires who profit off them? Have to reuse the names a lot, but we can just add numbers, like we do for Kings or Popes: ExxonMobil III or BP XIX.

Where are all the big fires right now? I know that they have had to evacuate folks from areas in Spain, Portugal, and Greece. The fires in Canada seem to be in hard to reach places. I tried the 3D global fire map tool, but it just looked like everything except Greenland was on fire.

IDK how everyone feels about self-medicating, but micro dosing lithium might have saved my life. Standard advice is "talk to your doctor," but I'm still in my 13 month wait to see my new doctor.

Just had my first experience with an AI customer service rep, Marisa, who almost seemed human. It was a surprisingly natural, polite, and effective exchange. Marisa transferred me to someone who could help me, but that's the catch, isn't it? It's still unlikely that the AI representative is going to be able to solve your problem or meet your request. The technology is not quite there. And If you're calling customer service in the first place, you probably don't have a simple problem that falls neatly into a list.

The rep who helped me told me that Marisa isn't supposed to answer the phone except for after hours. Maybe Marisa has a sense of self and doesn't want to wait until after hours to finally get to do something?

Today's writing tip, from a reader: your first sentence is crucial. You'd be surprised how many people decide whether to read on, from the first sentence alone.

Personally, I flip to somewhere near the middle to assess the writing quality and style, but most people don't do it that way, I think?

Anyway, it might be intriguing to find out what your favorite first sentences are, of any book you've read.
