Underneath the finely grated Parmigiano Reggiano is Scottish black pudding. Below that is a most wonderful mushroom risotto with a mixture of chestnut mushrooms and dried porcini. The seasoning is natural from the chicken stock and cheese, with a certain spice from the black pudding that is only in the Scottish ones with allspice added. fadc5513d0ff1643.jpg
