One of my favorite things. Mushroom risotto with black pudding. The recipe for the risotto is from an Antonio Carluccio book but the addition of black pudding was the idea of the great Gary Rhodes. Both of these lovely chefs sadly no longer with us.

If you really want a recipe in a handfull of this and a lump of that, do leave a comment, I'll do my best.

Underneath the finely grated Parmigiano Reggiano is Scottish black pudding. Below that is a most wonderful mushroom risotto with a mixture of chestnut mushrooms and dried porcini. The seasoning is natural from the chicken stock and cheese, with a certain spice from the black pudding that is only in the Scottish ones with allspice added.
