@0x4d6165@wanderingwires.net envs.net and unredacted.org are two I heavily promote because of their stability, speed, and amazing leadership and goals. You can find a complete list at https://servers.joinmatrix.org though - some other good ones (that I have personally used) are 4d2.org, calitabby.net, catgirl.cloud, tchncs.de, and arcticfoxes.net. Private.coffee and the-apothecary.club are also pretty stable, assuming you're okay with waiting a bit for a registration approval.
