When I was a kid and I played a video game that let me choose my character's gender, I wouldn't always choose to play as a female character.

In games where your character's gender has no effect on the gameplay, I'd think "Well, I
want to play as a girl, but I'm a boy, so I'm 'supposed' to play as a boy." Then I'd end up playing as a boy even though I didn't want to.

On the other hand, in games where you can choose between characters with different stats, some of whom happen to be girls, I'd have internal arguments with myself about whether I had a sufficiently "good reason" to choose the girl character.

For example, in the first three Mario Kart games, I mentally assured myself that I was definitely choosing Peach for her stats, and definitely not because she was the only playable girl.
