To follow an account in the directory, copy-paste its address into your search box on Mastodon etc, this will bring up its profile where you can click "follow".
To find out more about an account in the directory, just click on its address and this will open its page on its home server.

All of the recommended accounts have posted before!
If you click on an account and it looks blank to you, it may be because their previous posts haven't federated to your server yet.
However, after you follow them all of their posts from that moment onwards will federate to your server and you will see them.
This can happen if their account is very new or your server is very new. As you and they spend more time on here, this situation will become rarer.

There is a Fediverse weather service called FediMeteo which has weather accounts for thousands of locations around the world:

Some of them post extremely frequently because they're run by news agencies etc, and you're getting a firehose of articles.
You can narrow this down to articles about specific topics by following the account's "magazines", sub-accounts that only show posts on certain topics.
For example @AssociatedPress@flipboard.com posts all Associated Press articles, but @entertainment-AssociatedPress@flipboard.com is just AP's entertainment posts.
